Remember, we are not discussing about the edible artificial colors. Here the concept is to add more number of colored vegetables in your diet as they are rich in antioxidants. So the more colorful your diet becomes you will get more amount of antioxidants.
Antioxidants will reduce your cellular damage and prevent you from diseases like stroke, heart disease and memory loss. According to Ronald Prior, Research Chemist of USDA “Every hue — green, yellow, orange, red, purple, and even white — signifies a different class of nutrients, each of which offers a unique benefit.” He was one of the first researchers who measured the antioxidants present in the food that protects you as you grow old. For example:
- Orange/Yellow: Carrots, sweet potatoes, pumpkin, corn, melon and mango are rich in carotenoids. Carotenoids are considered to decrease the risk of cancer development.
- Green: Green leafy vegetables like broccoli and spinach are rich in lutein. Lutein helps in keeping your vision clear and sharp.
- Purple/Blue: Blackberries and blueberries are rich in anthocyanins. Anthocyanins are effective in preventing tumor formation and also in suppressing their growth.
- Red: Watermelon and tomatoes are surplus with lycopene. Lycopene is effective in preventing heart diseases and cancer.
- White: Cauliflower provides you with cancer-fighting benefits. Potatoes are rich source of Vitamin C. where as onions and garlic contains sulfur compounds which might ward off colon and stomach cancers. Some other white foods such as seafood, tofu, eggs, reduced-fat cheese and poached chicken are rich in important protein.
Mix-match these vegetables and fruits for a complete age-defying diet plan. Research study shows that antioxidants can work like a team enhancing each others effect. So enjoy your colorful diet for healthy living.
